Leave the complicated cooking at home when you go on vacation! Who wants to spend hours slaving in the kitchen when you could be at the pool, the beach, Disney World, etc., etc.? Anyway, you get the picture. As we’ve mentioned in previous posts, when you’re cooking in a timeshare, it’s important to keep 3 things in mind: you want something that’s easy, uses few ingredients, and tastes good.
Most of the time we eat a very simple breakfast in the condo—instant oatmeal, English muffins or store-bought cinnamon rolls with cream cheese frosting (I try to discourage these, but my husband invariably puts them in our shopping cart!) Lunch may be ham sandwiches on the run or we might stop at McDonald’s. But recently, we hit on an idea that could actually substitute for breakfast or lunch, or both. We came across this idea a few years ago on TUG (Timeshare User Group), but didn’t try it until recently. Since then, the recipe is all over the internet, so who knows where it originated?! We call the recipe Baggie Omelets.
This recipe uses more ingredients than I would normally use in a timeshare recipe, but some of the items are things that I might buy anyway for salads or sandwiches . At any rate, we like these omelets so much, we even cook them at home.
Baggie Omelets
You need a big pot of rolling, boiling water for up to 6 omelets. If you need to make more, take turns or boil a second pot of water.
Each person writes his name with permanent marker on a sturdy, quart-size Hefty or Ziploc bag. (The zip kind are OK, too). Open the baggie and crack 2 eggs into it. Close the baggie and mush the eggs around so they are well-scrambled. Then add your choice of omelet ingredients: grated cheese, chopped green pepper, tomatoes, bacon, deli ham, onions, mushrooms, whatever. Close and seal the baggie, making sure to get all excess air out of it.
Everyone is responsible for their own omelet, so this is pretty stress-free. When all are assembled, put them in the boiling water for 13 minutes. Now, set the table, fix toast andor fruit, and put your feet up while the omelets cook.
When the 13 minutes are up, the omelets will slide out easily onto plates. Everyone will think you are a genius for coming up with this idea. Enjoy!!!
